Chianti Superiore DOCG RIPALTELLA
Production area: Chianti Superiore “Ripaltella” is produced in the vineyards located in Bucine, in the Province of Arezzo.
Exposure: South-facing land with an altitude of 400 m a.s.l.
Soil type: these are soils rich in skeleton, deep, with a good draining effect. The grapes come from different vineyards: from the vineyards of the Municipality of Bucine, where the soil is sandy and silty; from the vineyards of the Giusterna area, whose soil derives from sandstone and is rich in skeleton; from the Ripaltella vineyards, where the soil is sandy and limestone with a low content of limestone.
Grapes: Sangiovese 100%
Production characteristics: the planting density is 4,500 plants per hectare, with a production of about 60 quintals of grapes and an average yield of 40 hectoliters in wine.
Vinification: the grapes are harvested manually, once they have been de-stemmed and pressed, the vinification begins in truncated conical vats. The alcoholic fermentation takes place in about 7-10 days and the subsequent maceration on the skins in about another 8-10 days at a controlled temperature of 27 ° C.
Maturation and refinement: 18 months refinement in large barrels. Before being placed on the market, Ripaltella is aged in the bottle for about 3 months.
Organoleptic characteristics: Ruby red color with purple reflections. It is a fresh, very pleasant wine that combines complexity and youth. On the nose the freshness of red fruits on which the violet and raspberry, spices and local aromas, typical of the territory, stand out. Full body, soft on the palate, with good acidity and persistence. An everyday wine.
Food matches: Fresh cold cuts, first courses with red sauces, pizza, fish.
