It comes from the careful selection of the grapes from a microparticle identified within the Passirano plot where, after careful zoning, the presence of a totally different soil, compared to the surrounding one, characterized by a very low pH that gives greater minerality and salinity to the grapes produced.
GRAPES: 90% Chardonnay 10% Pinot Nero
VINIFICATION: Soft pressing of the whole grapes, fractionation of the musts, only 30% is used for this type, low temperature fermentation for 14 days followed by 7 months refinement, part in steel and part in wood. Malolactic fermentation NOT carried out.
AGING ON YEASTS: 48 months
On the nose, great complexity notes of candied fruit, pastry and an almond finish.
TASTING NOTES: Freshness, flavor and minerality are accompanied by a fine, elegant and persistent structure.
