VINTAGE 2020
The stubble are the residual stalks of wheat that remain in the field after the harvest. Before 2002 the fields where today the vineyards of the SanFelo Farm are planted were suitable for the cultivation of wheat.
IN THE VINEYARD
Grapes: 100% Vermentino
Altitude: 150-180 m a.s.l.
Exposure of the land: mainly South-East
Soil type: sandy loam with sandstone skeleton, the soil is rather homogeneous
Training system: spurred cordon
Plant density: 5680 plants / ha
Yield: 9 t / ha
Harvest: when they reach maturity, the grapes are harvested, according to the climatic conditions, between the end of August and mid-September
IN THE BASEMENT
Vinification: the traditional white vinification takes place in tanks at a controlled temperature (max 18 ° C). Then the aging takes place on the vinification yeasts for about 1 month which takes place in the same tanks. Refrigeration at 0 ° and filtration follows. The wine is bottled by the February following the harvest

Bouquet: refined with complex hints of ripe fruit
