Origin: The Vosne-Romanée appellation represents 31 ares of the estate's total 9.5 hectares. Located north of Nuits, on very loamy soils derived from white clay, the soil is completely free of stones. The vineyard is known as "Aux Raviolles." Planted in 1935.
Vinification: Manual harvest by 40 harvesters who work for approximately one week. 100% destemming, pre-fermentation maceration at 10-12°C for 5-6 days in concrete tanks. Vinification at 28-32°C for 18-21 days with daily punching down to promote the extraction of color and phenolic compounds and to prevent the wines from becoming excessively bitter. After pressing, the wines are left to rest for 3-5 days in a buffer tank before being transferred to barriques (15% new). Racking takes place once in September of the N1 vintage and twice a month before bottling, which generally takes place in April of the N2 vintage. The wines are bottled without fining or prior filtration.
Tasting Notes: The wines of Vosne-Romanée embody elegance above all else. Their suppleness is dominant, supported by fairly subtle tannins and low acidity. These full-bodied wines, with excellent persistence, are highly aromatic. Their typicity highlights aromas of cherry, strawberry, and undergrowth.
Food Pairings: Roasts, game, meats in sauce, fine cheeses. They can be enjoyed from 4 or 5 years of age, continuing to age for several years.
