Location: This Grand Cru enjoys an exceptional location on the heights of the Corton hill, between Ladoix-Serrigny and Aloxe-Corton. Southeast exposure. Altitude 280 meters.
Production: This magnificent appellation has a production of approximately 600 bottles.
Grape variety: Chardonnay.
Cultivation methods: No herbicides or insecticides have been used since 2003. Sustainable agriculture is practiced, with a transition to biodynamic farming in 2011. The goal is to obtain High Environmental Value (HVE) certification in 2021.
Harvest: Handpicked.
Vinification: After gentle pressing, the grapes are transferred to a pneumatic press and pressed for approximately 2.5 hours. The must is then placed in vats at a temperature of 8°C for two days to remove solids (decantation).
Yeasts: Native types.
Aging: 35% in new oak barrels for 14-18 months. Natural malolactic fermentation in barriques.
Bottling: Light filtration with diatomaceous earth. Bottling takes place on the estate using my bottling line in late winter/early spring.
Tasting Notes: Minerality and finesse are its hallmarks. The well-defined palate boasts impressive length, with the legendary richness and buttery character of Montagne de Corton.
Food Pairings: It's breathtaking on its own! But also, of course, with fine fish and perfectly cooked white meats.
