Winemaking

The manual harvest is sorted at the estate. The proportion of whole clusters varies from 10 to 30% depending on the perception of the vintage.

For winemaking:

- Cold pre-fermentation maceration for 3 to 5 days

- Transformation of the must into wine 4 to 5 days by native yeasts.

- Finally, 3 to 4 days to finalize the extraction of soluble materials (tannins, anthocyanins, etc.) and allow a good combination thereof.

After pressing, the new wine is placed directly in 228 liter oak barrels (25% of which are new barrels). Then malolactic fermentation by indigenous bacteria completes the fermentation stages. During aging for 18 months in wood, 2 rackings are carried out to eliminate the lees. Bottling without filtration carried out by us at the place of production.

 

Tasting notes

Deep red color. These wines are often characterized by elegance and roundness, while retaining great tannic power. The aromas often evoke the raspberry of their youth then with aging the aromas of undergrowth or leather take over.

 

Accompaniment dishes

Bonnes Mares will preferably accompany strong dishes, marinated game, stews, cheeses. Serve around 17°C. These aging conditions give the wine good aging potential. These wines, which are renowned for their finesse and complexity, can be enjoyed on the freshness of the fruit as well as on the undergrowth notes after sometimes more than 10 years of aging. Aging in the bottle also allows the tannins to finish softening to become increasingly silky.
