Origin: The Nuits-Saint-Georges appellation represents 6 hectares of the estate's total 9 hectares. The parcels that make up this cuvée (St Jacques, Allots, Charmottes, and St Julien) are located north of Nuits on silty, sandy, and gravelly soils with occasional iron ore deposits scattered here and there on a bed of flint. Average Vine age: 70 years.
Winemaking: Hand-harvested by 40 pickers who work for approximately one week. 100% destemmed, pre-fermentation maceration at 10-12°C for 5-6 days in concrete tanks. Vinification takes place at 28-32°C for 18 to 21 days with two punch-downs per day to promote color extraction and release phenolic compounds. After pneumatic pressing, the wines are settled for 2-3 days to allow for proper sedimentation of the lees in the tank before being transferred to barrels (15% new). One racking occurs in September of year N1, and a second one month before bottling, which takes place approximately in April of year N2. The wines are bottled without fining or prior filtration.
Tasting notes: A dense and deep color, indicative of excellent aging potential. Vegetal nuances with wild fruit, such as sloe, mingle with strawberry and some floral notes. With age, the aromas refine, evolving towards leather and fur, combined with candied strawberry and blond tobacco. A very fine wine after 3 to 5 years.
Side dishes: It pairs wonderfully with roasts, game, meats in sauce and fine cheeses.
