Soil: Gevrey Chambertin is one of the villages with the highest vinified area. The vineyard is installed on slopes with an altitude for the municipal A.O.C between 240 and 280 m. It is an appellation that produces only red wines, in the municipalities of Gevrey-Chambertin (310 Ha) and Brochon (51 Ha) with an average of 12,000 Hl. The area owned by the winery is 2Ha and 28a and the production is 65 hectoliters (8700 bottles). The vines are treated according to methods that respect the soil and the plant in the best possible way. The size carried out is of the simple Guyot type.
Vinification: the vinification of the 80% destemmed harvest is carried out in three phases:
- Cold pre-fermentation maceration from 3 to 5 days
- Transformation of the must into wine from 4 to 5 days
- then 3-4 days to finalize the extraction of soluble materials (tannins, anthocyanins, etc ...) and allow a good combination of it.
After pressing, the new wine is placed directly into 228-liter oak barrels. (No new barrels to preserve the fruit and expression of the Pinot Noir). During a reproduction period of 18 months in oak 2 decantings are carried out to eliminate the lees. Finally, the bottling is carried out by us in the place of production.
Aging potential: 5-10 years.
Alcoholic content: 12.4% vol.
Tasting notes: deep red color. Perfume of great complexity with fruity aromas that dominate during his youth. It is a very tannic wine. Over time the tannins are rounded to give greater softness to this wine which retains great fullness.
Pairing: Gevrey-Chambertin is an excellent accompaniment to roasted meats and aged cheeses. Le Gevrey-Chambertin is a wine whose tannic qualities require an aging of 5-6 years before tasting it and will keep all its quality for more than 10 years in the bottle. It is renowned for being a powerful wine in the first few years following the harvest, then becomes more flexible with aging.
