Grapes: 100% Pinot Nero
Production area: La Côte de Nuits
Soil: Les Combottes is a Premier Cru located in the middle of the Grands Crus, which makes it a great quality wine. The total area is 5Ha 2a 55Ca. The area of the plot is about 41 ares 48 with an annual production of 18 hectoliters (2000 bottles). The vines were planted on clayey-calcareous soil, covered with 30 cm of earth. The vineyard is cared for using methods that best respect the soil and the plant. The size carried out is of the simple Guyot type.
Vinification: the vinification of the 80% destemmed harvest is carried out in three phases:
- Cold pre-fermentation maceration from 3 to 5 days
- Transformation of the must into wine from 4 to 5 days
- then 3-4 days to finalize the extraction of soluble materials (tannins, anthocyanins, etc ...) and allow a good combination of it.
After pressing, the new wine is placed directly into 228-liter oak barrels. (No new barrels to preserve the fruit and expression of the Pinot Noir). During a reproduction period of 18 months in oak 2 decantings are carried out to eliminate the lees. Finally, the bottling is carried out by us in the place of production.
Aging potential: 5-20 years.
Alcoholic content: 13% vol.
Tasting Notes: Intense red color. Complex and tannic wine with spicy notes.
Pairing: Gevrey-Chambertin 1er Cru Les Combottes is ideal for game and meat with sauces. It is a rich wine with an aging potential of 10 years or more of great quality.
